California Benedict

Makes 4 Servings.

4 Parts of Recipe:
(1)   In place of English Muffin:
Cranberry Toast
(2) In place of Canadian Bacon:
Bacon, Apple, Mushroom and Garlic Sauteed
Layer of Avocado
(3) Poached Egg
(4) Light Hollandaise Sauce
Ingredients:
4 slices cranberry bread
1 cup sliced mushrooms
1 garlic clove, minced
1/3 cup sliced Macintosh apple
4 slices honey-smoked turkey bacon
1 avocado, thinly sliced
4 eggs
White vinegar

For Hollandaise Sauce:
3 eggs
1 tablespoon lemon juice
¼ cup butter (1/2 stick)
Pinch salt
Pinch cayenne pepper
2 tablespoons plain Greek yogurt

Directions for Hollandaise Sauce:
1.      Separate egg yolks into bowl and combine with lemon juice. Whisk together.
2.      Using a double boiler (or may use a bowl over pot of simmering water), continue to stir egg yolk and lemon juice.
3.      Soften butter in a separate pot over low heat. Add softened butter into mixture of egg yolk and lemon juice. Whisk until mixture doubles in volume.
4.      Add pinch of salt and cayenne pepper.
5.      Before serving, if hollandaise sauce has thickened add in water until at desired texture, and thicken with 2 tablespoons yogurt.

Directions for Eggs Benedict:
1.      Lay bacon strips flat on sauté pan. Cook bacon strips on both sides on medium heat.
2.      Remove bacon, pat off extra oil with paper towel.
3.      Add mushroom slices, apple slices and garlic to pan. Cook until mushrooms and apples are soft.
4.      Chop cooked bacon into 1 inch size pieces. Add bacon to mushroom, apple and garlic mixture.
5.      Sauté until flavors meld together.
6.      Toast cranberry bread until crispy.
7.      Add bacon, mushroom, apple, garlic mix into a layer on toasted bread.
8.      Add one layer of thinly sliced avocado to top of bacon, mushroom, apple and garlic mixture.

For perfect poached eggs:
9.      Bring 3 inches of water to a low boil in deep sauce pan.
10.   In a separate bowl, pour 2 tablespoons of vinegar. Crack 1 egg into bowl. Let sit for 30 seconds.
11.  With a spoon, stir boiling water in saucepan to create a current (should look like a whirlpool).
12.  Pour egg and vinegar into saucepan.
13.  Cook until yellow of egg is no longer visible. Egg white should have solidified around egg yolk.
14.  Repeat with all 4 eggs.

Bring it all together:
15.  Place poached egg on top of avocado slices.
16.  Generously add hollandaise sauce on top of poached egg.
17.  Enjoy!
