30 Minute Meal: Spicy BBQ Pork and Veggie Patties



These delicious patties are made with zucchini, carrots, sweet potatoes and pulled pork for an easy to prepare and balanced meal.

Servings: 8
 
Ingredients
2 cups mashed sweet potatoes
2 medium sized zucchinis, grated
1 large carrot, grated
16 oz pulled pork
3 eggs
1 tablespoon honey
2 tablespoons cayenne pepper
1 tablespoon ketchup
1 tablespoon salt
2 tablespoons pepper

Directions
  1. Combine all ingredients in a large mixing bowl and mix together until mixture forms an even consistency.
  2. Lightly grease a sauté pan.
  3. With ¼ cup, measure a scoop into the pan and form a pancake type of shape.
  4. Cook until brown on one side, about 5 minutes. Then flip and repeat on the other side.
  5. Serve and enjoy!

Serving Suggestion: Side of sauteed broccoli rabe.
