Black Bean – Coconut Brownie


My experiment with substitutions in my kitchen. Substitutions: applesauce, avocado, coconut flakes, black beans. Almost every ingredient in a typical brownie recipe was replaced except for eggs and cocoa powder. Gluten free. Diabetes friendly. Celiac's disease friendly. Almost vegan (except for eggs). Low in carbs and sugar. High in protein and fiber.

 

Tip: Replace eggs with chia or flax seeds for a vegan recipe.



            This is no ordinary black bean brownie recipe. It also uses applesauce, avocado and coconut flakes to replace the butter and add some bulk to this recipe. Gluten-free and dairy free!


Ingredients
4 cups black beans, cooked
1 cup unsweetened apple sauce
2 eggs
1 avocado (1/2 cup mashed)
½ cup bitter cocoa powder (unsweetened)
½ cup semi-sweet chocolate chips
2 tablespoons vanilla
½ tsp salt
1 cup coconut flakes

Directions
  1. Preheat oven to 300oF.
  2. Combine all ingredients into a large bowl and stir together until an even consistency. Pour ingredients into a blender to smooth out any inconsistencies.
  3. Lightly grease a 9” x 12” baking pan. Pour batter into pan.
  4. Bake for 30 minutes.
  5. Serve and enjoy!
