Healthy Chocolate Peanut Butter “Ice Cream” Sandwich
Today at a work meeting, I started craving
peanut butter and Oreos during my meeting (Yes-- like from the vintage Survivor
episode). However, when I was at the grocery store after work, I thought of an
even better idea and came up with the following concoction for a lighter
dessert:
Recipe
makes 2 sandwiches.
Ingredients
4
chocolate, chocolate chip cookies
2
tablespoons peanut butter
2
tablespoons low-fat Greek yogurt
½
medium apples
Directions
1. Mix
together peanut butter and Greek yogurt until a smooth and even texture. Adding
a little low-fat Greek yogurt to the peanut butter maintains the texture of the
peanut butter, adds volume to the filling and cuts the fat from the peanut
butter in half.
2. Mince
the apple into small pieces.
3. Mix
apple pieces into peanut butter – yogurt mixture, such that the filling stays
smooth.
5. Top
2 of the cookies with the peanut butter – yogurt – apple filling. Place plain
cookie on top of cookie with filling to form a sandwich.
6. Enjoy!
Tip:
For a frozen treat, freeze “ice cream” sandwiches for 1 – 2 hours so that
filling has a texture and temperature more similar to ice cream.
