Peanut Butter – Walnut – Dark Chocolate Fudge Brownie in a Jif
Growing
up means having to take care of oneself. To me, that means more cooking. Cooking does not normally translate to baking for me. However, lately, as I have done a
lot of experimenting on the stove top, and not so much in the oven, I have had
desires to bake. My latest creation was a twist on brownies made from brownie
mix. For a novice baker, I don’t think this try was half bad!
Ingredients
1
package Jiffy Fudge Brownie Mix
1/3
cup walnuts, chopped
2
tablespoons peanut butter
2
one square inch squares of bittersweet baker’s chocolate
2
one square inch squares of unsweetened baker’s chocolate
1
egg
1
tablespoon water
2
tablespoons canola oil
Directions
- Preheat oven to 350oF.
- Whip eggs, water and canola oil together in a large bowl.
- Add package brownie mix to eggs, water and canola oil. Mix together until smooth.
- Add peanut butter to batter and mix together until blended.
- Mince baker’s chocolate blocks into shreds with a chef’s knife.
- Add unsweetened baker’s chocolate, bittersweet baker’s chocolate and chopped walnuts into batter. Mix well until evenly distributed.
- Pour batter into a 9 inch x 5 inch loaf pan.
- Bake for 25 – 30 minutes.
Tip:
Top with vanilla frozen yogurt and berries for a delicious and not so heavy
dessert!
