Four Ingredient Sweet Potato Pancakes
On Twitter I saw a recipe for
3-ingredient Sweet Potato Pancakes and thought I would make my own! As I got
started on the batter of this recipe – I realized that they were not coming out
like traditional breakfast pancakes—you know—the flapjack kind. They were more
like latkes. Thus, I added some yeast and whole wheat flour. The pancakes still
came out like a hybrid of potato pancakes and flour pancakes with some sweet
potato thrown in. For pancakes with a more flapjack like consistency, increase
the proportion of flour to sweet potato.
Makes
12 pancakes
Ingredients
2
mashed medium sweet potatoes (about 3 cups)
¼
cup soy milk
3
eggs
¼
cup whole wheat flour
1
teaspoon yeast
¼
cup water
Nutmeg
Cinnamon
1
teaspoon vanilla extract
Directions
- After mashed
sweet potatoes are prepared, add to a large mixing bowl. Add soy milk,
eggs, flour, yeast and water to bowl. Stir together until smooth. Season
with vanilla extract, nutmeg and cinnamon.
- Lightly grease a sauté pan or griddle. Add batter to pan.
- Cook until lightly brown on each side.
Serving
suggestions: top with Greek yogurt and side of fruit.
