Vegan Stuffed Peppers
Looking for a summer recipe that is great for your vegetarian and vegan friends? Stuffed peppers that are traditionally stuffed with beef, are great stuffed with many different ingredients. This vegan stuffed peppers is packed with healthy protein from lentils, nuts and a soy cheese blend to for a balanced vegan meal.
Makes 6 Servings, 1 Serving = 1 Stuffed Pepper
Ingredients
6 Bell Peppers
1 cup Brown Rice, cooked
2 cups Lentils, cooked
12 oz Soy Cheese Blend - Cheddar, Mozzarella and Jack Flavored, shredded
1 cup almonds, roughly ground
1 tablespoon cayenne pepper
Directions
1. Preheat oven to 350 degrees F.
1. Combine rice, lentils, soy cheese, ground almonds and spices in a large mixing bowl and stir to combine.
2. Using a paring knife, remove the stems of the bell peppers.

3. Using a spoon, stuff the peppers with the filling.
4. Place stuffed on a baking dish, lined with aluminum foil. Bake for 30 minutes.
5. Serve and enjoy!
